Inter-individual retronasal aroma release variability during cheese consumption: Role of food oral processing

The aim of our study was to explain inter-individual differences on in vivo aroma release during cheese consumption by oral physiological parameters. To reach this objective, 34 subjects were recruited. Their salivary flow, oral volume and velum opening were determined. Six cheddar-based melted cheeses with different fat levels and firmness were flavoured with nonan-2-one.(NO) and ethyl propanoate (EP). Also, still today there is little attention paid to the relevance of educating millennials about the importance of a healthier lifestyle and eating. Risk assessment and monitoring programme of nitrates through vegetables in the Region of Valencia (Spain)

This study was carried out to determine current levels of nitrate in vegetables marketed in the Region of Valencia (Spain) and to estimate the toxicological risk associated with their intake. A total of 533 samples of seven vegetable species were studied. Nitrate levels were derived from the Valencia Region monitoring programme carried out from 2009 to 2013 and food consumption levels were taken from the first Valencia Food Consumption Survey, conducted in 2010. Abstract We aimed to investigate the effects of a long-term, individualised, family-based lifestyle intervention on food consumption and nutrient intake from childhood to adolescence. We conducted an 8-year diet and physical activity intervention study in a population sample of children aged 7–9 years at baseline in 2007–2009. Starting from the assumption that space is a language and that food is also a language, what we will try to show in this paper is how these two languages, together, carry specific concepts of animality. For this reason, we will focus on two different places of food consumption that place animals at the centre of their proposal and that in recent years have spread in urban environments: cat cafes, where cats are conceived as subjects to pet, endowed with a predominantly emotional value, and dog restaurants, where dogs are in fact the real restaurant clients.

OBJECTIVE: To investigate whether reported fast-food consumption over the previous year is associated with higher childhood or adolescent body mass index (BMI).
